Everybody alway says TruePianos is so great....but honestly they sound fake as hell to me...Jazzbaby is much better and is free.
Real instruments ? Probably the Accordion.
To anyone having trouble with drums, I'd suggest trying to program them. People will tell you it takes away "realism", but if you take the time to "program" them realistically, it won't be a problem. Step sequencers can be your best friend.

Piano... even when recording it live, it still sounds like ass. Maybe it's the sounds I'm using, I don't have a good piano VST.
Hell yeah midi is your friend, lol. I usually just play them but instead of quantizing (depending on the groove i'm going for) i'll arrange the notes manually. Tweaking velocities moving midi notes slightly forward & backwards does wonders. Sound selection is of course the ultimate key though.
Only way I do it.
I don't like the idea of using a keyboard to lay out drums either..
I sequence everything
