You guys started doing it the hard way.
Here's the trick.
You guys already know how to add the vsti/dxi, set the port, etc...
Usually, I just set the vsti to port 0 and the midi outs usually default to this anyways. So then I add a midi out generator and it's ready to go.
The next thing is that you have to set the bank and patch.
If you look to the left of an instrument name, there's something that will look like this:

This for example corresponds to the Concert piano patch. In the FL midi out generator, set the bank value (the second box in this case) to 5. In this case the general midi channel corresponds to a piano but ignore those names and choose whatever the lower number is next to the orchestral patch (001), in this case that would be 1.
If you wanted the "full strings" patch:

Set the bank number to 0 and the patch number to 31. Again, this is not set in the first, but the second bank box. And then set the patch number to 31. General midi corresponds to a distorted guitar but again, ignore that.
This way, every time you open your project you are working on, the instruments will load up as they should.
