It's a guitar, sampled from the Shaft soundtrack. May have been replayed, I'm not sure.

Replayed guitar. Dre has stuff replayed so he doesn't get sued, which doesn't always work out for him. He occasionally still gets sued anyways.

It's not so you don't get sued. Arrangements are protected under copyright along w/ the actual sound recording. Having a sample of original music replayed is still copyright infringement.
The reason you have samples replayed is to get a clean sound that can be mixed w/ your version of the song. It's easier to manipulate when creating & mixing your track.

The lead from the Shaft song was an organ. Dre had it replayed as a guitar, and sped up the tempo.

I have a genuine question.
How do you guys go about telling the instruments apart ?
I find myself listening to instrumentals/beats and wondering how to go about recreating them and it just makes my head hurt.
Any tips ?

Pretty much this, listen to the instruments and study what they sound like over time you just know
Don't get me wrong, I can tell some instruments apart but there are others that I find really hard to pin point.
Lol.
 
Sampling just seems like such a hassle. I can't lie though some of the most popular songs and biggest hits have been samples so i'm not knocking its power. He could of achieved this with some minor synth programming I'm pretty sure I could recreate this and not have to bring in a professional guitarist and pay him to play 3 or 4 notes lol.
