I keep making "un-rapable" beats?

IMO, anything can be rapped over, depending on your flow.

like mac dre's "on the run" was rapping over a rock beat.

and Cali Life Style, they usually rap over old funk and oldie beats

Another thing you might want to try is getting an acapella and make a beat under it. Try and get one where you dont have to **** about with tempos cos that will just complicate everything.

this is also something i've attempted, but everytime i try to i can only think of the same beat and melody of the real instrumental. i tend 2 do this alot when making my own beats, n i always end up thinking later on "dam this sounds just like ...." its hard 2 clear my mind when ive just listened 2 a song or when 1 of my music reminds me of 1
 
LOL, i do this too! I can't rap but my mumble flows are offffff the hoook! :P

Seriously though, I do that too. I think every producer should be able to at least mumble the flow out over their beat just to test it to see the beat will work or not. Sometimes I'll have a beat I really like, but rap just doesnt work over it, but singing does perfect, so then that becomes an R&B tack. Thats how I decide at least, I generally start with the intent of just making something funky that can be rapped over, but if not, it becomes a funk/r&b track. And if neither rapping nor singing works, it could be an intro/interlude if I really like it and want to use it for something, and just have spoken word over it.

To the OP, generally I think its all about rhythm, your beats gotta have a good funky rhythm to rap over, imo. So listen to some old funk songs and to try to learn how to make funk music first. After all, thats what hip hop was born from.
 
you need to quantize your melodies (getting the notes on the grid) 'cause I heard some of the notes are off-beat
 
i just wrote a diss track on this one b.








j/k but add a few tweaks (change the main strings, eq your drums, add some synth) and it could be good to go

add some hihats shakers or some type of perc to add flavour to the beat. thats all that beat is missing
