It depends on the genre, the tastes of that genre's fans, the individual requirements of the music and quite often the budget of the production, among other things.

Listeners don't care how you make your music, a little secret, I've heared that your music has to just sound good to be liked by others....
Midi is what pro' s use to make up for the lack of skills musicians have when they have to perform live.
Live instruments is what personality managers want to see on stage and in videoclips, because making music should look like it is done simple, easy, fast and ofcourse without any knowlegde about musictheory and that thing that realy makes music fameus.... how to record that shit properly
