What VSTs or mixing techniques to fatten up and add a little saturation to your final mixes in your beats or compositions? Can anyone recommend any VSTs that could help give character to the mix?

you can use a tube compressor like the Fairchild 670 or an optical like the cla-2a

Are these hardware or software based? Any difference to invest in either hardware or software?

Like somebody already mentioned the fairchild emulation plugins are pretty good, the SSL g master bus compressor works nicely as well. I wouldn't put it on a mix bus but the fabfilter saturn is typically my first goto for adding color/distortion on a per track basis.

Distortion and Compression are huge for colour. Distortion amplifies the overtones and its great to shape the amplified sound thru compression.
Reverb is also good tool for colouring, use in moderation :)
