middle eastern vibe

what kind of structure do those musicians used to get that middle eastern feel, with the flutes/strings and all? i know how to get that oriental feel on a track but it just seems i cant get that middle eastern vibe... can anybody help me out on this one?

time signature?
what kind of chords do they use?

look up the "arabian" scale. see where that leads you. other than that, listen to a lot of middle eastern music, and try to catch the vibe.
 
There are many different scales that can sound arabic. Here are three that I found:

h=half step
w=whole step
m3=Minor 3rd

h, w, h, m3 - Repeat

The thing about this pattern is that if repeated, it will not lead you to use the same notes in the following lower or higher octaves. It sounds arabic none the less.

Here is another arabic scale:

h,w,h,w - repeat

This will also sound a bit arabic but unlike the last one, this one will use the same set of notes for all octaves.

Here is another arabic scale:

h, m3, h, w, h, w, w - repeat

This is will lead you to use the same set of notes on all octaves. This scale is also widely used in Spanish Flamenco, Pasodoble and folk music. It sounds arabic due it Spain's Moorish influence.

Another:

h, m3, h, m3 - repeat.
