Thor seems to have everything that the Subtractor and Malstrom has.. Are the subtractor and malstrom good for anything themselves?

Yes.
Subtractor is a very good subtractive sysnthesiser and models some sounds that Thor cannot do.
Malstrom is more about using sonic grains to create clouds of sound - think fractals or wavelets - add self-similar synthesis to your thinking and malstrom starts to make sense
