Is it possible to play a song with multiple scales or do you have to stick to one scale in order to be on key?

Yes, happens in jazz nearly all the time.

it's called polytonality if you use multiple scales at the same time and chord-scale theory if you apply the jazz approach to soloing

most folks find the first incarnation troubling as you are having your sense of harmony tugged in two directions at once.

the second version works on the principal that each chord can be found (and therefore harmonised) in several different scales/modes
