Roman Numeral Chords

So I'm trying to learn some Music Theory.
Let's start with the scale of C Major: C D E F G A B C

The seven chords in that scale are:
CEG I
DFA ii
EGB iii
FAC IV
GBD V
ACE vi
BDF vii

I've learned that uppercase means Major (perfect thirds) and lower means Minor (flatted thirds).

However, will it always be: (I, ii, iii, IV, V, vi, vii) for every major scale or does it change?

I'm trying to learn all of this so I can get better at making chord progressions. Once, I understand all of this I will progress to learning the 7th chords.
 
The Roman numerals are invariant: i.e. they stay the same regardless of key - that is why they are used, to show a progressions or sequence of chords in any key. Choosing a specific key you can then work out the specific chords for that key, e.g. F# major: F#G#A#BC#D#E#F#

F#A#C# I
G#BD# ii
A#C#E# iii
BD#F# IV
C#E#G# V
D#F#A# vi
E#G#B vii

so its the same for all Major scales

in Minor scales the upper and lower cases are changed a bit, right?
 
Yes

Natural minor
i iib5 bIII iv v bVI bVII

Harmonic minor
i iib5 bIII#5 iv V bVI viib5

Melodic minor
i ii bIII#5 IV V vib5 viib5

b5 indicates that the chord also has a b5
#5 indicates that the chord also has a #5
