There's lots of Kontakt libraries you can get with tons of ethnic/worldly sounds. I think one of them is like Ethno World or something. Also, I can't remember who makes it off the top of my head, but I have a really nice Chinese Guzheng that I got from computer music magazine, but it sounds like the sound your going after is a little more middle eastern than chinese.
