Are you perhaps talking about Maximus in FL? Read the manual, seriously. It both explains what saturation is and what the knobs do.
Saturation, in general, is a type of distortion, usually associated to recording hot on analog tape but can also mean a bunch of other analog equipment being pushed close to their operational limits.
Saturation A & B are probably just different flavours of distortion.
