Hi everyone,
I know this is a noob question but what is the difference between this 2 format? How it will affect the final work?

The difference is in the noise floor. Recording and mixing at 24bit will make it considerably easier to gain-stage because you'll be able to leave a ton of headroom instead of trying to get everything close to zero. Just record and mix everything at 24bits - you don't really need 16bit for anything anymore (except burning audio CDs).

i think chris nailed it.. only when it comes to mastering you should think about dithering when creating a CD master

Back in the day's memory was a thing. Now just go full scale as you will not run out of HD space quickly
