Deleted FL11 demo, now I can't open FL12 says quickfontcache.dll did not found

if some of the original fl install files were with fl11, then you may have to reinstall the demo.

did you install a fresh copy of fl12 on there or did you upgrade to 12 from the fl 11 demo?

This shouldn't matter. Whenever you want to upgrade FL you need to download the new demo installer and install the Reg Key-file ontop of it. So if you install a new version of FL without uninstalling the old one, they will run without affecting eachother. So uninstalling FL 11 shouldn't affect FL 12.
