Can somebody explain what a flip is?

It's just sampling but the new jacks call it "flipping" or "flip".

more precisely a flip is what you do with a sample taken from an existing recording (as opposed to a sample of an instrument or object or animal) - as in you flip the sample into a new track/beat - say "Poor boy" with its sample from the opening of "Bohemian rhapsody" is a flip on that sample.
