The Neptunes, see Clipse / Britney Spears. Even though they always added some rugged undertone even to the pop stuff they did.
Kanye also improved his variability from "Chipmunk soul" to "Stadium Hip Pop". And I mean that as a compliment, even though I love records like The Blueprint or College Dropout.
And you can't forget Timbaland. At the end of the 90s / beginning of 00s, he did some of the most ill and creative hip hop beats (you know, basically anything he did for Missy) and in 2006 he pretty much set the foundation for the style of Pop Music the likes of Lady Gaga based their whole career on with FutureSexLoveSounds.

IMO Rick Ruben (JayZ, Metallica, Adele, Beastie Boys, Aerosmith, Johnny Cash) and DangerMouse ( MF Doom, Black Keys, Broken Bells, Gnarles Barkley, Gorillaz and the Grey Album) are the 2 most versatile producers.
