Sound desgin question

is sound design mostly just playing around until you find something you like or do you go into knowing what you want want to do.what I use it reason's thor polysonic synthesizer
 
A bit of both.

Sometimes I'll watch 'make this sound' tutorials on youtube and copy those. Other times, I'll just try things until something sounds nice. Or I'll start off doing one and end up doing the other by the end

After a while you do learn what things sound like. It's obvious what filters, reverb, distortion etc sound like, once you've heard them once you know what they do, but some things like FM you never 100% know what the effect is going to be.
 
If I'm just starting a track, I'll typically just fudge around until something pops up that sounds good. Like scrapeheaper said, it's very tricky knowing what FM synthesis / modulation will create.

Later on in production (when a track is coming along, or near the end), I typically know exactly what kind of sound I'm going for and I do my best to create it.

Overall, sound design encompasses both experimentation and purposeful creation.
