This is sounds to me like what I've always done, but I'm not sure. For example, I'll record a rhythm guitar two times and pan them both out 100%, one left and one right. The end result sounds nice and wide. Even in midi drums and such, it's setup as a parent channel that sends out multiple mono tracks, one for the snare, one for the kick, one for toms etc. etc. that you can then pan where ever you want them. I find everything is easier when you pan your inputs and adjust your faders to get the best possible sound before doing anything else.
