sadly what you suggest is not entirely true in my experience - it is true of works by Mozart and Beethoven and those who came before and after in the art music world, as they were compelled to use predictable formulae to compose to so that their audiences would not be too surprised by the music presented for listening
hunt and peck works if the piece is repetitive, but you really do need skills that are based in hearing the scale/mode in play and the movement of chords and type of chords in use within the piece (so you are using skills in identified interval movement, chord type recognition and scale/mode recognition)
