How to tell what key a song is in?

A simple way of finding what key a song is in is by using a keyboard that is not detuned, and by listening to the song. Now keep pressing or playing the note until you hear that the note fits and or sounds right with all the chord progressions/melodies.:)
 
sadly what you suggest is not entirely true in my experience - it is true of works by Mozart and Beethoven and those who came before and after in the art music world, as they were compelled to use predictable formulae to compose to so that their audiences would not be too surprised by the music presented for listening

hunt and peck works if the piece is repetitive, but you really do need skills that are based in hearing the scale/mode in play and the movement of chords and type of chords in use within the piece (so you are using skills in identified interval movement, chord type recognition and scale/mode recognition)
 
Of course being able to identify the scale and mode is the best way, (and the easiest when you know how to...), but if you haven't got the theoretical knowledge, the process I described often works...
 
get a lil xylophone and just play along with a song until it matches, but first you will need ear training band coach has got it spot on
