This might be a stupid question but how does someone play piano like that? is it just learning chords and scales to do that? because he's just freestyling and playing till he hears what he likes? or is it learning chord progressions?

You won't even have to practice piano directly to able to do that after long. Thats more music theory and understanding what notes usually do what in their scale/ how different note and interval relationships may act together, etc.. as far as the playing style, you will pick that up in no time without even trying if youre constantly making a bunch of melodies.

But id say your goal if you wanna do this would be more understanding fundamental music theory versus actually practicing piano. Keeping in mind practicing piano is also (OBVIOUSLY) gonna be able to make you do this and more.. But I'm just saying, at the bare minimum to be able to do this all you need is basic scale theory and to know where the notes on the piano are. Then youll be able to randomly pluck away till you get something you like.

But dont take this post the wrong way, actually practicing piano and doing everything the 'right' way will be way more productive in the end..Dont just shoot for a goal of being able to pluck in melodies with one finger, because once you get there youre gonna wanna be able to do more.

This video shows how many melodies you can play in 3 minutes if you know music theory and piano skills :)
