Creating LFO sound

How is the LFO created in the first 1:30 of Sage Armstrong & Wood Holly, "Ass Out"?

It's a sine wave with the LFO set to alter the pitch then automated to become slower as the song progresses.
 
Completely depends on your daw, there's usually a way to record you moving the knob or to link the speed to something like a mod envelope.
 
In ableton, you would activate envelopes for the track you want to apply the pitch change to, then basically draw how you want it to change over the course of time over the song or loop. OR you can record live automation using a knob from a controller, as mentioned above
