you could find a good mic for under 500
try a Blue Bird. Its about $250, best mic under 300.

Check ebay/craigslist. I purchased a used Roland NT1000 a couple years ago for about half of it's list price. Given the right recording environment and a good preamp I've gotten some good results out of it.
try the blue bird mic, its 300 but it records nicely
