How do people sample something and only take the instruments, not the voice?

There is a great tutorial on this by ken lewis he mixed jay z rocboyz and he shows you how he isolated the horn section type in Google men lewis sampling ROC boys and you should find it...it cost some money but its worth every penny
 
Occam's razor is a philosophical process that tells you to accept the theory with the fewest assumptions;

so as an answer to your above question "how did he remove the vocal?", you are assuming that that is what he did; perhaps instead the answer is ask a different question, such as, "did he remove the vocal or (as pumpthrust suggests) did he just get people in to play the parts again?"

which would be easier and less taxing on the imagination to achieve? the alternative question is a simpler question and much more easily believed as a process

^ i agree it's much more likely, google the frequency chart and you'll see that frequencies of vocals and instruments overlap too much for this to be done almost always.

unless they got an instrumental version.
