Basic sampling question

I'm very new to sampling and have a question. In this video, its seems that mac miller isolates kick drum hits and snare drum hits for the record, how does he do that when there aren't any solo sections. He also takes part of a sax and isolates to make a new melody. I guess the question is how do you sample only certain parts of a song if it isn't isolated.
 
Essentially, you don't.

In regards to the drums, his kick, snare and hi-hat probably came from his drum kit collection. You can find drum sounds like kicks and snares from any drum break. Dig and you shall find. I don't think that the drum sounds (other than the percussion/rain drop loop) came from those three vinyls.

As for "isolating" an instrument from a song, you can do this by equing.
 
I would suggest messing with the EQ and getting what you desire. I personally remove most of low's from anything not a kick drum to give it a extra kick, but for hip hop it doesn't need to be so extreme.
 
eq will do the trick.. that's all you can really do.. it makes the other noises less prevalent in the part you chopped...
