I would have to say Nexus 2 with the expansion packs for it, its my go to VST I use it in most of my productions, however I would have to say z3ta+ comes to a close second, I just love how you can edit the sounds on it and make them your own.

Nexus is pretty good to my taste. Gotta look into Omnisphere after a while. Also for pianos "Pianissimo" is pretty cool, don't even cost a lot.
