MIDI is like a universal interpreter for synths, that was its original concept.
It evolved quickly into being a file storage format, which is how hardware and software sequencers came into the picture.
It further evolved into being a control format for many different devices including hardware reel-to-reel recorders, lighting consoles.
Some folks even used MIDI as a networking protocol to allow communication between two or more computers on the same bus or star network.
MIDI for the average musician is about recording and playing back note streams for various synths. Your interface and your DAW will allow you to use an external keyboard or controller to record midi data in the sequencer part of the DAW.
The bottlenecks come with MIDI's speed which is very low by todays network speed standards, something like 3 200bps compared to 1 000 000 000bps.
Everything else is about how to use it inside your DAW, which is best explored y reading the manual or finding relevant tutorials on the net.

MIDI is the coding behind the sequencer - it is the language for capturing and playing back grid/notation based entry for your daw

Question about midi keyboard controllers. is it better for it to be connected through computer via USB converter or an A/I.. or does it not matteR?
I'm assuming A/I is an audio interface . . . it does matter.
If you connect a controller and don't use the proper audio driver, you could experience latency. That will effect how your controller reacts with your software.
Your audio driver will determine the latency. Every interface has it's own set of drivers and there is also this driver which is pretty popular :

If your not familiar with the term latency and what it does. google it.
