All I want to do is record vocals and produce beats, will VERY rarely be playing instruments.

To my limited knowledge I understand the saffire 6 has midi in and out (what exactly does this mean?) and is USB 1.0 which isn't as good, is there any differences I should be aware of and which one would you recommend just for my purposes?

You can read about the basics of MIDI here. It's not as necessary as it used to be, as a lot of modern devices simply have their own built-in MIDI interfaces that connect via USB (like most MIDI controllers do, for example). And there's nothing bad about USB1.1 - it simply has lower bandwidth compared to 2.0, which means you can't record as many simultaneous tracks with it, but as these interfaces only have two inputs, it's perfectly adequate for the purpose. So I guess you'd do just fine with the Scarlett 2i2.
