do turntables play with a stereo output, the way it was recorded? like when i play a record will some of the instruments be on the LEFT and the others on the RIGHT, the way it was recorded? or do i need to buy something for that? right now i have my turntable going to my phono preamp, and from there to the line input on my mixer, which is connected to two speakers, L & R

Yes turntables are in stereo. If you're running into a single line input on your mixer you're either just getting the left channel (most likely), or a mono mix of both left and right sides (which would be unusual for a device to do automatically). You need to run a second line into your mixer. Take the first line-in, and pan it all the way to the left. Take the second line in and pan it hard right. Match up the volume of both channels and you'll be able to record a full stereo mix.
