why do soundfonts sound low quality

Soundfonts come in all different quality.
But the better one will be the one that you have to paid for.
Also many of the company that make sample libraries don't use
SF format because that can not protect the libraries.
They dont want people getting there sfuff for free.

It's just compacted audio files like any other format(Refills, Sampletank, Kontakt, Triton, ect.)

I know this, but still just never really cared for soundfonts, not sure why.

Soundfont Quality

Low Quality Soundfonts can be made to sound better, think about eqing them, brightening them and adding reverb, its Digital so the quality isnt going to be bad, it may just need that helping boost

you cant polish a turd. he doesn't just mean bad sound quality but just bad sounding instruments.

it depends on what you are using to make the soundfonts...the demo of extreme sample converter makes low quality soundfonts...there is no problem there...juz get you something that can boost the quality back up

You can't really "boost the quality back up" - if it's a low-quality sample, it's a low-quality sample. You can try to mask that fact by drowning it in effects, but the quality isn't gonna magically re-appear.
