using vst's with MPC 2000xl/Protools

Technically yes. But it can be a pain in the ass.

Essentially you would be loading virtual instruments on Instruments track. The routing is very important. Set each Instrument track to to only receive data for its respective channel on the MPC. You will have to leave all track in rec ready mode. Can be a messy pain in the ass.

You would probably be better off syncing Pro Tools your MPC together using MTC or Midi Beat Clock. This would all you to sequence yiour MPC parts your MPC while sequencing your VI's and audio in PT.

No prob. Not sure if you are a Reason user but it works well using a MPC as the master sequencer. I used Reason as my synth engine for a while before I stopped sequencing in my MPC.

You could also look at finding a VST host that doesn't have a sequencer.
